Five hours splits two ways. Stay airside and the Primeclass lounge sells entry from EUR 45 booked online or EUR 55 at the door, with showers and towels included, open 05:00 to 23:00. That covers food, a wash and a quiet seat without leaving the building.
Or commit to the city. Bus 22 reaches central Riga in about 30 minutes, which turns five hours into a real walk through Old Town with margin to get back. If your documents let you enter Schengen, this is the better use of the time.

Old Town is the correct move
With 8 hours, leaving is not just possible, it is the right call. Bus 22 departs from outside the terminal every 10 to 20 minutes and drops you at the 11. novembra krastmala stop, directly across from Old Town, for a EUR 1.50 machine ticket that covers 90 minutes of city transport. Minibus 241 is the backup near the P1 parking area.
You must be cleared to enter Schengen to leave the airport, and entry rules depend on your nationality. Budget being back 2 hours before departure, which still leaves several hours in the medieval centre. Verify before travel.
Overnight
The terminal is open, the pods are the comfort
Riga is a workable overnight by Baltic standards. The terminal stays open 24 hours, so nobody moves you on at night, but the free seating is metal and the building runs cold, which makes a long stretch on a bench miserable rather than restful.
