The Navette Aéroport shuttle reaches the main train station in about 21 minutes and the Commerce stop in the centre in about 28, so the round trip plus an hour or two in town fits comfortably. The machines of the Ile de Nantes, the castle of the Dukes of Brittany and a compact, walkable centre are all within reach of a 10 euro ticket that also covers the onward tram.
Watch the return. The shuttle is reliable, but a missed 20 minute headway plus an evening security queue eats margin fast.

A proper half day in the city
With 8 hours, central Nantes is an easy half day rather than a dash. The shuttle drops you at the station and Commerce, and from there the tram network and your feet cover the castle, the cathedral, the Jardin des Plantes and the riverside without rushing. Lunch in the centre beats anything in the terminal by a wide margin.
Aim to be back at the airport about 90 minutes before a Schengen departure, more if your flight is in the busy daytime bank, since yours will not be the only one boarding. Verify any visa rules before travel.
Overnight
Take a room, not a bench
The curfew makes an overnight at the airport pointless, because no flight departs between midnight and 6 am, so there is no schedule to wait for inside. The better play is 300 m away. The Oceania Nantes Aéroport and the Escale Oceania are both about a 5 minute walk with a free shuttle on request, and a B and B hotel sits about a 10 minute walk out. For an early departure, any of the three beats a bench you might be moved off at closing.

The shuttle wins for almost everyone. Its 10 euro ticket stays valid for an hour across the whole TAN network plus TER trains within the urban area, so the onward tram or bus leg costs nothing extra, and it runs frequently enough to plan around. The budget route, bus 38 to Pirmil then a tram into the centre, saves a few euros but costs you time and patience outside peak hours.
